Most NY dough recipes want a 24-hour cold ferment. This one uses a little extra yeast and a warm rise so you go from flour to slice in under two hours. The keys: a screaming-hot steel or stone, a simple uncooked sauce, and low-moisture mozzarella.

Ingredients

  • 3 1/2 cups (450 g) bread flour
  • 1 1/2 tsp instant yeast
  • 2 tsp sugar
  • 2 tsp salt
  • 1 1/4 cups (300 ml) warm water, about 105°F
  • 1 tbsp olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp salt, 1 tsp dried oregano and 1 tsp sugar, for the sauce
  • 12 oz low-moisture whole-milk mozzarella, shredded
  • Grated Parmesan and olive oil, to finish

Method

    Mix the flour, yeast, sugar and salt. Add the warm water and olive oil and mix until a shaggy dough forms. Knead 8–10 minutes by hand (or 5 in a stand mixer) until smooth and elastic.

    Divide into 2 balls, place in oiled bowls, cover, and let rise in a warm spot for 60–75 minutes until doubled.

    Put a pizza steel or stone on the top rack and preheat the oven to its highest setting (500–550°F) for at least 45 minutes.

    Stir the crushed tomatoes with salt, oregano and sugar. That's the sauce — no cooking.

    On a floured counter, press a dough ball from the center out, leaving a thick rim. Stretch over your knuckles to about 14 inches.

    Move to a floured peel or parchment. Spread a thin layer of sauce, scatter the mozzarella, and add a dusting of Parmesan.

    Slide onto the hot steel and bake 6–8 minutes until the bottom is crisp and the cheese is blistered. Finish with a drizzle of olive oil, slice, and fold.
