Mongolian Beef (Better Than Takeout)

Takeout Mongolian beef is usually gloopy and way too sweet. The fix is simple: slice the beef thin, coat it in cornstarch so the edges crisp, and cook the sauce hard for just a minute so it clings instead of pooling. Toast the aromatics first — that's where the flavor comes from.

Ingredients

  • 1 lb flank steak (or sirloin), sliced thin against the grain
  • 1/4 cup cornstarch
  • 3 tbsp neutral oil, divided
  • 1 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/3 cup brown sugar
  • 1/2 tsp red pepper flakes (optional)
  • 6 green onions, cut into 2-inch pieces
  • Steamed rice, for serving

Method

    Pat the beef dry and toss with cornstarch until every slice is lightly coated. Let it sit 10 minutes while you prep everything else.

    Whisk the soy sauce, water, brown sugar and red pepper flakes in a bowl. Set it next to the stove.

    Heat 2 tbsp oil in a wok or large skillet over high heat until it shimmers. Add the beef in a single layer (work in batches) and sear 1–2 minutes per side until crisp and browned. Remove to a plate.

    Lower the heat to medium, add the remaining oil, then the ginger and garlic. Toast the aromatics 30 seconds — just until fragrant, not brown.

    Pour in the sauce and let it bubble 2–3 minutes until it thickens enough to coat a spoon.

    Return the beef and add the green onions. Toss for 1 minute so everything gets glossy.

    Serve immediately over steamed rice.
