10-Minute Beignets

Café du Monde is a long drive from my kitchen, so this is the shortcut: biscuit dough, hot oil, a snowstorm of powdered sugar. They're not 'authentic', but they're crisp, puffy, and gone in minutes — and the Princess and the Frog fans in my house approve.

Ingredients

  • 1 can (16 oz) refrigerated biscuit dough (8 biscuits)
  • Neutral oil for frying (about 3 cups)
  • 1 cup powdered sugar
  • 1/2 cup chocolate chips
  • 2 tbsp heavy cream

Method

    Heat 1 1/2 inches of oil in a heavy pot to 350°F.

    Cut each biscuit into quarters (or leave them whole for big pillows) and gently stretch each piece into a rough square.

    Fry 4–5 pieces at a time, 1–2 minutes per side, until deep golden and puffed. Don't crowd the pot.

    Drain on a rack for a minute.

    Microwave the chocolate chips and cream in 20-second bursts, stirring between each, until smooth.

    Bury the beignets in powdered sugar — more than feels reasonable — then drizzle with the chocolate. Eat immediately.
